Sweet potato

Step 1

Preheat the oven to 400°F. Peel & cut the sweet potatoes into cubes.

Smoked Paprika

Step 2

On a parchment-lined sheet tray, add the sweet potatoes. Drizzle with olive oil. Season with salt, pepper & smoked paprika. Mix then bake for 15-20 min at 400°F.

Falafel

Step 3

Remove the sheet tray from the oven & move the sweet potatoes to one side. Add the falafel to the other side & return to the oven for 10-15 min. Remove when the sweet potatoes are tender & the falafel are cooked through & golden brown.

Greek Yogurt (plain)
Garlic
Lemon

Step 4

Meanwhile, prepare the yogurt sauce. In a bowl, mix the yogurt, lemon zest & lemon juice. Grate in the garlic. Season with salt, pepper & a drizzle of olive oil. Set aside.

Quinoa (cooked)

Step 5

Reheat quinoa according to package instructions.

Feta cheese (block)
Parsley (fresh)

Step 6

Serve the quinoa, sweet potatoes & falafel in a bowl with the yogurt sauce on the side. Sprinkle with crumbled feta & chopped fresh parsley, if you have any. Enjoy!
