Step 1

Add the beets, cucumber, goat cheese, a squeeze of lemon juice & mint (optional) to a blender bowl. Add 1 cup of water (per person). Season with salt & pepper.

Blend until silky smooth. Serve garnished with mint leaves (optional) & a drizzle of oil. Enjoy!
