Couscous

Step 1

Prepare the couscous according to the package instructions.

Ground beef
Cumin (ground)
Mint (fresh)
Shallot

Step 2

Chop the mint. Peel & mince the shallot. Add the ground beef & cumin to a mixing bowl. Add most of the mint & shallot, reserving the rest for the sauce. Season with salt & pepper. Mix it all together.

Use your hands to form the mixture into meatballs. Thread the meatballs onto the end of each skewer.

Heat a drizzle of oil in a pan over medium heat. Add the skewers to the pan. Brown on each side for 2-3 min, or until cooked through.

Mint (fresh)
Shallot
Lemon

Step 5

Squeeze the lemon juice into a small bowl. Add the yogurt, salt, pepper & remaining mint & shallot. Stir it all together.

Step 6

Serve the meat skewers over a bed of fluffy couscous. Drizzle with the yogurt sauce. Enjoy!
