Smoked salmon makes this classic baked potato so exciting!
Oven, Aluminum foil
Step 1
Preheat the oven to 400°F. Wash & wrap the potatoes in aluminum foil. Place them on a baking sheet & bake for 50 min - 1 hour or until fork tender.
Step 2
Meanwhile, peel & finely chop the shallots.
Step 3
Once the potatoes are cooked through, remove them from the oven & unwrap them.
Step 4
Cut the potatoes in half lengthwise. Garnish them with the sour cream, smoked salmon, shallots, capers & dill.
Step 5
Serve the baked potatoes with the lettuce dressed to your liking. Add a squeeze of lemon juice on top, if desired. Enjoy!
