Potato

Step 1

Preheat the oven to 400°F. Peel & cut the potatoes into cubes.

Red onion

Step 2

Peel & cut the onions into cubes.

Garlic

Step 3

Mince or finely grate the garlic.

Butternut squash (fresh, cubed)
Olive oil

Step 4

Add the butternut squash, potatoes, onions & garlic to a sheet tray. Drizzle with olive oil & season with salt & pepper. Mix together, transfer to the oven & cook for 25-30 min at 400°F, or until tender. Stir halfway through.

Step 5

When the veggies are golden brown & tender, remove from the oven.

Spring mix lettuce
Balsamic Vinaigrette
Smoked salmon

Step 6

Dress the lettuce with balsamic vinaigrette & serve on a plate with the roasted veggies & smoked salmon. Enjoy!
