Stovetop, Frying pan, Parchment paper, Sheet Tray, Oven, Knife
Step 1
Roughly chop the fresh mint leaves.
Step 2
In a small bowl, mix together the Greek yogurt, mint & half the garlic (crushed or minced).
Step 3
Add a drizzle of olive oil, salt & pepper to the yogurt. Then refrigerate.
Step 4
Heat a drizzle of oil in a pan over medium heat. Add the spinach & the rest of the crushed or minced garlic. Sauté for 1 min.
Step 5
Turn off the heat. Season with salt & pepper. Crumble the feta cheese into the pan. Stir to combine & set aside.
Step 6
Cut the filo sheets in half, using half of a sheet for each triangle.
Step 7
Gently separate your first filo half-sheet.
Step 8
Brush it with olive oil.
Step 9
Place a spoonful of filling on one end of the sheet.
Step 10
Fold the end of the sheet over the filling. Then continue folding the triangle of filling up & over, alternating sides. (Like you're folding an American flag!) Press the end tightly to seal. Repeat with the remaining filo & filling.
Step 11
Place the filo triangles on a parchment-lined baking sheet. Bake for 10 min at 400°F, or according to the filo package instructions. The triangles should be golden & crispy.
Step 12
Serve with the chilled mint-yogurt dip. Enjoy!
