Step 1
Preheat the oven to 450°F. Peel & slice the potatoes into fries. Add the fries to a bowl of ice water & rinse.
Step 2
Drain the fries & pat dry. Transfer the fries to a mixing bowl. Add a drizzle of oil. Season with salt & pepper. Toss to evenly coat the fries.
Step 3
Arrange the fries on a parchment-lined baking tray. Bake for 25-30 min, stirring halfway through. The fries should be crisp & golden.
Step 4
In a small bowl, mix together the yogurt, lemon juice & chopped chives. Season with salt & pepper.
Step 5
Cut the avocado in half. Remove the pit & the peel.
Step 6
Add the avocado to a bowl. Season with salt & pepper. Add an extra squeeze of lemon or lime (optional). Mash it all together with a fork.
Step 7
Remove the salmon skin, if needed. Heat a drizzle of oil in a pan over medium heat. Add the salmon. Season with salt & pepper. Cook for 3-4 min. Turn over & cook for 1 more min.
Step 8
Toast the buns in the same pan for 15 to 30 seconds. Remove the buns & salmon from the heat.
Step 9
Spread the yogurt sauce onto the bottom half of each bun. Layer the spinach over top.
Step 10
Add the salmon & mashed avocado. Close the sandwiches.
Step 11
Remove the fries from the oven. Serve hot alongside the sandwiches. Sprinkle chopped chives over the fries. Enjoy!
