Make sure you have...
Knife, Stovetop, Frying pan
Step 1
In a small bowl combine sour cream & lime juice. Stir into a thinned crema sauce.
Step 2
In a medium sized bowl, add enchilada sauce & tortilla chips. Gently toss the chips until evenly coated.
Step 3
Heat a drizzle of oil on a non-stick pan over medium heat. Add in the saucy chips. Stir & cook until they are heated through, about 3 min.
Step 4
Transfer the hot chips to a plate & heat another drizzle of oil in the pan. Crack in the eggs. Cook undisturbed for about 3 min, or until the whites are completely set & the yolk is still runny. Season with salt & pepper. Turn off the heat & slide the egg over the chips.
Step 5
Halve & peel an avocado. Remove the pit & thinly slice.
Step 6
Serve the chilaquiles with crumbed Cotija cheese, sliced avocado & a drizzle of crema. Garnish with fresh cilantro if you have. Serve & enjoy!
