Step 1
Prepare the couscous according to the package instructions.

Toast the pine nuts in a pan over low heat. Shake the pan to keep them from burning!
Step 3
Remove the olive pits (if needed). Then slice the olives.
Step 4
In a small bowl, whisk together the lemon juice, salt, pepper & a drizzle of olive oil.
Step 5
Add the fluffed couscous, olives & pine nuts to a serving bowl. Drizzle over the dressing. Crumble in the feta cheese. Garnish with fresh cilantro (optional). Enjoy!
