Step 1
Preheat the oven to 425°F. Peel & mince the onion.
Step 2
In a large bowl, add ground meat, panko breadcrumbs, 1/2 cup of the milk per loaf, ketchup, onion, mustard, Worcestershire sauce & egg. Season with salt & pepper. Mix it all together using your hands or a large spoon.
Step 3
Line a sheet tray with aluminum foil. (Or use a greased loaf pan!) Add the meat mixture to the tray and form a 6 inch x 3 inch loaf.
Step 4
Top with additional ketchup (optional). Cook the loaf for 35-40 min at 425°F, or until it reaches an internal temperature of 160°F.
Step 5
Peel & dice the potatoes.
Step 6
Boil the potatoes in a pot of salted water until they are fork tender, about 15 min.
Step 7
Drain the potatoes & return them to the pot.
Step 8
Add the remaining milk & the butter to the potatoes. Mash it all up with a fork or potato masher.
Step 9
Season with salt & pepper. Mix until combined.
Step 10
In a pot of salted boiling water, cook the broccoli florets for 3-4 min, or until crisp-tender.
Step 11
Remove the meatloaf from the oven. Slice & serve it with a side of mashed potatoes and broccoli. Enjoy!
