Step 1
Preheat the oven to 425°F. Peel & slice the onion.
Step 2
Clean & halve the potatoes.
Step 3
Drain & roughly chop the olives.
Step 4
Line a sheet tray with parchment paper. Drizzle with olive oil. Pat dry the chicken with a paper towel & arrange on the sheet tray, skin side up. Add potatoes in the empty spaces around the tray, along with tomatoes, onions, salt, pepper & a generous drizzle of olive oil over top. Roast in the oven at 425°F for 30 min or until cooked through.
Step 5
Remove the tray from the oven. Sprinkle with chopped olives & crumbled feta. Add a squeeze of lemon & serve garnished with fresh herbs if you wish! Enjoy!
