White rice (long grain)

Step 1

Cook the rice according to the package instructions.

Avocado
Green onion (scallions)

Step 2

Peel the avocado & remove the pit. Slice the avocado. Chop the scallions. Set aside a small amount of scallions for garnish. (Chives are yummy here as well!)

Egg

Step 3

Heat a drizzle of oil in a pan over medium heat. Gently crack the eggs into the pan. Season with salt & pepper. Cook the eggs sunny-side up for 2-3 min, or until cooked to your liking.

White rice (long grain)
Rice vinegar
Green onion (scallions)

Step 4

Fluff the rice. Season it with salt & pepper. Add the scallions & rice vinegar. Stir to combine.

Serve each bowl of seasoned rice topped with avocado slices & a fried egg. Garnish with the reserved scallions. Enjoy!
