Buttermilk

Chicken thighs (boneless, skinless)

Step 1

In a mixing bowl, add the buttermilk, egg, paprika, salt & pepper. Whisk to combine. Add the chicken thighs to the bowl. Let the chicken marinate for 15-20 min in the refrigerator.

Vegetable oil

Step 2

Meanwhile, heat the vegetable oil in a frying pan.

Flour (all-purpose)

Step 3

Add the flour to a dish. Remove the chicken from the buttermilk marinade & dredge the chicken in the flour, making sure to coat the chicken on all sides completely.

Step 4

Carefully test that the oil is hot by adding a splash of flour to see if it sizzles. The oil should be about 350ºF. Add the chicken & cook. Flip the chicken every few min until fully cooked & golden brown, about 12-15 min. Remove the chicken & transfer to a paper towel lined dish.

Burger bun (brioche)
Pimento cheese
Spring mix lettuce

Step 5

On a toasted bun (optional), spread the pimento cheese onto both halves. Add a handful of lettuce & the fried chicken onto the bottom bun. Close the sandwich & enjoy!
