Step 1

Preheat the oven to 400°F. Wash & cut the potatoes into 1-inch cubes.

Cherry tomatoes

Step 2

Wash & cut the cherry tomatoes in half.

Garlic

Step 3

Mince the garlic.

Step 4

On a sheet tray, add the potatoes. Drizzle with olive oil. Season with salt & pepper. Toss to coat & bake for 15-20 min at 400°F.

Step 5

Remove the sheet tray from the oven. Add the cherry tomatoes & garlic. Toss to combine the veggies, then push them to one half of the sheet tray.

Cod (fresh)

Step 6

Place the cod fillets on the other side of the sheet tray. Drizzle with olive oil. Season with salt & pepper. Return to the oven & bake at 400°F for 10-15 min, until the cod is fully cooked & flakes easily. Remove from the oven.

Parmesan (shaved)

Step 7

Sprinkle the veggies with shaved parmesan.

Basil (fresh)

Step 8

Serve the cod & Italian-style potatoes on a plate. Season to taste & garnish with fresh basil, if you have any. Enjoy!
