Knife, Stovetop, Frying pan, Skewers
Step 1
Pat the chicken dry & cut into 1-inch cubes. Add the chicken to a bowl with 1/2 the BBQ sauce. Toss until evenly coated. Thread the chicken onto wooden skewers, about 4-5 cubes per skewer.
Step 2
Heat a grill pan over medium-high heat. Brush the grooves with oil. Grill the skewers for 10-12 min, turning occasionally as you go. Each time you turn the chicken, brush with the extra BBQ sauce.
Step 3
As the chicken grills, prepare the salad. Wash & roughly chop the lettuce.
Step 4
Wash & halve the tomatoes.
Step 5
In a mixing bowl, add the lettuce, tomatoes & fire roasted corn. Drizzle in the avocado-lime dressing & toss it all together.
Step 6
Once the chicken is nicely charred & fully cooked, remove it from the heat. Plate the salad with the skewers on top. Serve & enjoy!
For an extra boost of flavor, marinate the chicken for 1 hour or up to overnight if you have the time!
