Chicken breast

Step 1

Pat the chicken dry & place it in a zip top bag or lay plastic wrap overtop. Use a meat mallet or rolling pin to pound the chicken to an even 1/4-inch thickness. Remove the plastic then season all over with salt & pepper. Season well with your favorites like garlic powder, onion powder & smoked paprika. Drizzle with olive oil & rub to coat evenly.

Step 2

Heat a grill or grill pan over medium-high heat & add the chicken. Sear the first side for 3-5 min or until nicely charred & the meat releases from the pan easily.

Cucumber (English, seedless)
Cherry tomatoes
Red onion
Feta cheese (block)

Step 3

As the chicken grills, prepare the veggies. Clean & slice the cucumbers into thin rounds. Rinse the cherry tomatoes & slice in half. Peel & thinly slice the onion. Cut the feta into bite-sized cubes

Barbecue sauce

Step 4

Once the first side of the chicken is nicely grilled, flip it over. Generously brush the grilled side with bbq sauce. Sear the second side for 3-5 more min, or until the chicken is just cooked through. Flip 1-2 more times, brushing on additional bbq sauce with each flip, until it's perfectly saucy. Remove from the heat & rest on a cutting board.

Pita bread

Step 5

On the same pan, grill the pita bread for 1-2 min per side or until it's toasty. Halve the pita & add it to a plate.

Feta cheese (block)

Step 6

Slice the grilled chicken. Plate everything together: grilled bbq chicken, fresh veggies, cubed feta & toasted pita. Drizzle the veggies & feta with a bit of olive oil. Season to taste with salt & pepper. Serve & enjoy!
