Pasta (orecchiette)

Step 1

Cook the pasta according to package instructions. Meanwhile, slice the zucchini in half lengthwise. Then cut into half moons. Mince or crush the garlic.

Step 2

Heat a pan over medium-high heat. Add a drizzle of oil, then the zucchini & garlic. Cook, stirring for 5 minutes.

Ricotta cheese
Pine nuts

Step 3

When pasta is cooked, drain it. Add it to the pan with the ricotta, salt, pepper & a squeeze of lemon juice. Garnish with mint leaves, pine nuts & lemon zest (optional). Enjoy!
