Step 1

Cook or soak the couscous according to the package instructions.

Cherry tomatoes
Avocado
Buffalo mozzarella

Step 2

Halve the tomatoes. Cut the avocado into cubes. Slice the mozzarella.

Pesto
Arugula

Step 3

Fluff the couscous. Combine with the pesto, tomatoes, avocado, mozzarella & arugula. Season with salt, pepper & a drizzle of olive oil. Toss together & serve!
