Step 1
Preheat the oven to 400°F. If needed, defrost the salmon filets. Rinse the sushi rice several times before cooking according to package instructions.
Step 2
In a baking dish, add the salmon. Season with salt, pepper & a drizzle of olive oil. Bake for 15 min at 400°F.
Step 3
Meanwhile, in a small bowl, combine the rice vinegar, sugar & a pinch of salt.
Step 4
Once the rice is cooked, transfer it to a bowl. Pour the rice vinegar mixture on top & gently fluff the rice.
Step 5
Once the salmon is cooked through, remove the dish from the oven. If needed, remove the salmon skin & add the filets to a mixing bowl. Mash it using a fork.
Step 6
Add the cream cheese, half of the mayonnaise & the sriracha. Mix, then add the soy sauce & mix again.
Step 7
Cut the nori sheets into small, thin strips.
Step 8
In a baking dish, add the sushi rice in an even layer. Sprinkle with the nori strips & spread the salmon mix on top. Bake for 10-15 min at 400°F.
Step 9
Once the spicy salmon sushi bake is nicely browned, remove the dish from the oven. Let sit for 5 min before garnishing with a drizzle of sriracha & the remaining mayonnaise. Sprinkle with minced chives, if you have some & enjoy !
