Step 1
Preheat the oven to 425°F. Clean the potato & use a fork to prick several holes around the skin. Wrap the potato in foil & bake in the oven for 40-45 min, until softened. Allow the cooked potato to cool slightly.
Step 2
As the potato cooks, line a microwave-safe plate with a paper towel, add the bacon slices & cover with another paper towel. Microwave for 3-4 min, or until crisp & chewy. Once cooled, crumble the bacon.
Step 3
Rinse & thinly slice the scallions. Chives work great here too!
Step 4
Slice the cooked potato 3/4 of the way down the center. Top the open potato with cheese & bake in the oven until the cheese is melted, about 6-7 min.
Step 5
Garnish the potato with crumbled bacon, scallions & a dollop of sour cream. Season with salt & pepper. Enjoy!
