Preheat the oven to 450°F. Cook the potatoes in a pot of salted boiling water for 10 minutes or until fork-tender.
Meanwhile, in a small bowl, mix the yogurt & feta with salt & pepper to taste. Stir in chopped chives or scallions (optional).
After 10 minutes, drain the potatoes thoroughly. Place them on a baking sheet lined with parchment paper. Using the bottom of your small pot, smash them to break them open!
Top with a drizzle of olive oil. Season with salt & pepper. Bake for 10 minutes at 450°F, or until golden brown.
Serve the potatoes hot, topped with the cool feta-yogurt sauce. Super yum!
