Slow cooker
Step 1
Add the cream of chicken soup, diced tomatoes & taco seasoning to the slow cooker. Stir to combine.
Step 2
Add the chicken breast to the slow cooker & coat the chicken in the tomato mixture. Cover & cook for low for 5 hours or high for 2 hours.
Step 3
Remove the lid & add the Mexican style rice & 1.5 cups of water. Stir everything together. Cook for another 1 hour on high heat or until the rice is fully cooked.
Step 4
Remove the lid & take the chicken out of the slow cooker. Shred the chicken.
Step 5
Serve the rice topped with the shredded chicken. Garnish with fresh cilantro if you have any. Enjoy!
