Jasmine rice

Step 1

Cook the rice according to the package instructions.

Red onion

Mince the onion & set aside.

Chicken breast

Step 3

Cut the chicken into cubes & slide the pieces onto wooden skewers.

Heat a drizzle of oil in a pan over medium heat. Add the onion & a pinch of salt. Cook, stirring for 3 minutes. Add the chicken skewers. Cook for 2 min on each side.

Coconut milk
Peanut butter
Chili powder

Step 5

Add the coconut milk, peanut butter & chili powder to the pan. Season with salt & pepper. Stir to combine. Reduce the heat to low, cover & cook for 3-5 min.

Cilantro (fresh)
Peanuts
Lime

Step 6

Once the chicken is cooked through, remove it from the heat. Serve the chicken skewers over rice. Pour the peanut-coconut sauce over top. Garnish with chopped peanuts, cilantro, shredded coconut & lime wedges (optional). Enjoy!
