Salmon & Creamed Spinach Puff Pastry

Spinach (frozen)

Step 1

Preheat the oven to 350°F. Heat a drizzle of olive oil or a pat of butter in a pan over medium heat. Add the frozen spinach & a drizzle of water. Cover with lid & cook for 5 min.

Step 2

Then, add the sour cream, cream cheese, crushed or minced garlic, salt & pepper to the pan. Stir & continue cooking until most of the water has cooked off the spinach.

Puff pastry

Step 3

Unroll the puff pastry sheet. Spoon the creamed spinach over top, spreading to form a rectangle in the center of the pastry. Lay the skinless salmon fillets over the spinach.

Step 4

Separate an egg, keeping only the yolk. Brush the edges of the pastry with egg yolk. Cut slits (1 inch apart) around the edges of the pastry. Fold in the top & bottom. Then brush them with egg. Braid the strips, folding eachinward, from one side to the other.

Brush the loaf with the remaining egg yolk. Place in a parchment lined baking dish & bake for 35 min at 350°F.

Step 6

Remove from the oven. Let cool slightly before slicing. Enjoy!
