recipe

Feta cheese (block)

Step 1

Drain & dry the feta with a paper towel. Cut it into 1-2 inch cubes.

Egg

Step 2

In a deep plate, add the eggs. Season with salt & pepper. Whisk, then dip the feta to evenly coat.

Sesame seeds

Step 3

Add the sesame seeds to a second plate & coat the feta evenly on all sides.

Neutral oil

Step 4

Add enough neutral oil to a frying pan to cover the surface of the pan. Heat the oil over medium heat. Once the oil is hot, add the feta & cook for 2-3 min on each side, until lightly golden brown. Remove the feta & place on a paper towel-lined plate.

Prepare the vinaigrette. In a bowl, combine: the balsamic vinegar & 1 teaspoon of olive oil per serving. Season with salt & pepper.

Spring mix lettuce

Serve the lettuce in a bowl with the sliced apples & crispy sesame feta bites. Drizzle with the vinaigrette & re-season to taste. Enjoy!
