Ingredients

Stovetop and Pot (small).

Recipe

Sweet potato

Step 1

Peel & cube the sweet potatoes.

Step 2

In a pot of boiling salted water, cook the sweet potatoes for 10-15 mins until fork-tender. Once cooked through, drain them.

Egg

Step 3

Meanwhile, in a pot of boiling water, cook the eggs for 6 min. As the eggs cook, prep a bowl of ice water. After 6 min, transfer the eggs to the ice water to stop the cooking. Once cool to touch, peel off the shells & set aside.

Step 4

Season the sweet potatoes with salt & pepper. Add a knob of butter & mash until smooth & creamy.

Balsamic vinegar
Dijon mustard

Step 5

Prepare the vinaigrette. In a bowl, combine: the balsamic vinegar, mustard & a drizzle of olive oil. Season with salt & pepper.

Arugula
Chives (fresh)

Step 6

Serve the sweet potato mash on a plate with the soft-boiled eggs cut in half & arugula. Top with a drizzle of vinaigrette & the minced chives, if you have any. Enjoy!
