Roasted Sausage, Peppers & Potatoes

Red bell pepper

Step 1

Preheat the oven to 400°F. Trim & seed the bell pepper. Cut into large chunks.

Yellow onion

Step 2

Cut the onion into large chunks.

Garlic

Step 3

Thinly slice the garlic.

Italian sausage (mild)

Step 4

Cut the sausages into thick slices.

Potatoes (baby)

Step 5

Combine all the ingredients in an oven-proof dish or pan. If the potatoes are large, cut them into chunks. If small, halve them.

Thyme (dried)

Step 6

Drizzle with olive oil & add the thyme (optional). Season with salt & pepper. Mix well & bake for 30 minutes.

White wine

Step 7

After 30 minutes, remove from the oven. Add the white wine to deglaze the pan. Stir all together.

Step 8

Bake for another 5-7 minutes. Remove from the oven & serve. Dinner's ready!
