Step 1

Preheat the oven to 425°F. Trim & halve the Brussels sprouts.

Rinse the sprouts in a colander under running water.

Wash & peel the potatoes. Cut them into cubes.

Place the Brussels sprouts & potatoes on a parchment-lined baking sheet.

Step 5

Season with salt, pepper & a drizzle of olive oil. Stir to combine.

Andouille sausage (smoked)

Step 6

Add the sausages (cut into chunks or left whole). Roast for 10 min at 425°F.

Whole grain mustard

In a small bowl, combine the honey & mustard.

After 10 min, add the honey-mustard mixture to the veggies & sausage.

Almonds (sliced)

Step 9

Add chopped almonds (optional). Mix it all together.

Continue cooking 10 min, or until the veggies are nice & golden.
