Baguette bread

Step 1

Preheat the oven to 375°F. Slice the baguette into 1/2 inch rounds.

Olive oil

Step 2

Place the slices of bread on a baking sheet & drizzle with olive oil. Bake for 5-6 min until the bread is lightly browned.

Peas (frozen)

Step 3

Meanwhile, take the peas out of the freezer & add them to a bowl. Microwave according to package instructions. You can also boil water in a saucepan or kettle & pour it over the peas. Set aside for 3 min before draining.

Ricotta cheese
Mint (fresh)
Garlic
Olive oil

Step 4

In a bowl, combine ricotta, grated garlic, salt, pepper, a few chopped mint leaves & a drizzle of olive oil. Mix everything until the mixture becomes smooth & homogeneous.

Step 5

Arrange the toasts on a platter. Spread the ricotta mixture evenly over the toasts.

Step 6

Add a spoonful of peas on top.

Step 7

Season to taste & add a few fresh mint leaves. Serve & enjoy!
