Beef (skirt steak)
Carne asada marinade

Step 1

In a medium bowl, add the steak & pour in the marinade. Toss to evenly coat, then cover the bowl. Refrigerate for a minimum of 15 min & up to 1 hr.

Olive oil

Step 2

Once the steak has marinated, heat a drizzle of oil on a grill pan over medium-high heat. Shake off the extra marinade & lay the steak on the hot pan. Sear, undisturbed until browned, about 2-3 min. Flip & cook 3-4 more min for medium-rare doneness. Transfer the meat to a cutting board.

Step 3

On the same pan, toast the roll, cut-side down.

Step 4

Thinly slice the steak.

Refried pinto beans
Cotija cheese
Shredded lettuce
Cilantro (fresh)

Step 5

Build the torta: on the bottom half of the roll, spread a layer of warmed, re-fried beans. Add the sliced steak & top with crumbled Cotija cheese. Add a handful of shredded lettuce & some fresh cilantro if you have. Serve & enjoy!
