Step 1

Preheat the oven to 400°F. Peel & cut the carrots in half lengthwise, then into slices.

Dijon mustard
Honey

Step 2

Combine the honey & mustard in a small bowl.

Garlic

Step 3

Add minced or crushed garlic, salt, pepper & a drizzle of oil to the same bowl. Whisk to combine.

Chicken leg (quarters)

Step 4

Grease an oven-proof baking dish. Then add the chicken.

Brush the chicken with half of the honey-mustard mixture.

Thyme (dried)
Carrots (fresh)

Step 6

Arrange the carrot slices around the chicken, drizzling them with oil. Sprinkle thyme over everything.

Step 7

Season with salt & pepper. Pour a bit of water into the perimeter of the dish. Bake for about 30-35 min at 400°F. Halfway through, baste the chicken with the remaining honey-mustard sauce. Remove from the oven when the chicken is cooked through & the carrots are tender.
