Step 1

Cook the rice according to the package instructions.

Pork (tenderloin)

Step 2

Slice the pork tenderloin into medallions about 1-inch thick.

Butter (unsalted)

Step 3

Melt the butter in a pan over medium heat. Add the pork. Cook for 2-3 min on each side.

Dijon mustard
Thyme (dried)
Heavy cream
Honey

Step 4

Add the cream, mustard, honey & thyme. Season with salt & pepper. Stir it all together.

Step 5

Cook for 2-3 more min.

Fluff the rice & spoon it onto plates. Top with the pork medallions. Drizzle with the pan sauce. Enjoy!
