Step 1
Cook the rice according to the package instructions.
Step 2
Wash & pat dry the cherry tomatoes. Heat a drizzle of oil in a pan over medium heat. Add the tomatoes, salt, pepper & Italian seasoning. Gently stir it all together. Cover & cook for 3-5 min, shaking the pan halfway through.
Step 3
Heat another drizzle of oil in a separate pan. Add the pork chops. Season with salt & pepper. Cook for 3-5 min on each side, or until done to your liking.
Step 4
Remove both the tomatoes & the rice from the heat.
Step 5
Spoon the fluffed rice onto a serving plate. Top with pork chops & blistered tomatoes. Season with salt & pepper. Pour the tomato & herb pan juices over top. Garnish with chopped parsley (optional). Enjoy!
