Wash the zucchini. Slice into thin ribbons with a vegetable peeler, avoiding the seeds.

Crumble feta cheese over top.
Add the lemon juice, lemon zest & chopped herbs.
Season with salt, pepper & a drizzle of oil. Toss it all together.
Garnish with pine nuts (optional).
