Stovetop, Frying pan, Pot (small), Colander, Whisk, Knife
Step 1
Roughly chop the pancetta & add it to a pan over medium-high heat. Stir & brown the pancetta for about 5 min, then remove the pan from the heat.
Step 2
In a pot of salted, boiling water, cook the pasta according to package instructions.
Step 3
Separate the whites from the egg yolks. In a small bowl, beat the yolks.
Step 4
Reserve 1-2 ladles of pasta cooking water per serving. Then drain the pasta. Pour the pasta water into the egg yolks & whisk to create a smooth mixture. Add grated parmesan, salt, pepper & mix again.
Step 5
Add the drained pasta into the pan with the pancetta. Heat the pan on low & add in the sauce. Toss it all together for 1 min. Serve everything on a plate with a more grated parmesan if you wish. Enjoy!
