Stovetop, Frying pan, Knife
Step 1
Cook the ramen noodles according to package instructions. Reserve the seasoning packet for a later step. Peel & slice the shallots thinly.
Step 2
Wash & dice the eggplant into 1-inch chunks.
Step 3
Heat a pan over medium heat. Add the pork. Cook & stir for 2-3 min. Add the shallots & cook for 3-4 more min. Transfer the meat to a bowl.
Step 4
In the same pan, heat a drizzle of olive oil over medium heat. Add the eggplant. Season with salt & pepper. Cook for 2-3 min. Add 2 tbsp water per serving, cover & continue cooking for 7-8 min.
Step 5
When the eggplant is softened, stir in the meat.
Step 6
Add the noodles with 1 tbsp water per person. Mix well, cover & cook for 2-3 min. Add the seasoning packet, mix again & cook for an additional 2 min.
Step 7
Serve the fried noodles on a plate or bowl with avocado slices. Sprinkle with sesame seeds. Serve & enjoy!
