A simple Scandinavian lunch or entrée salad that's both hearty & healthy!

Step 1
Peel & cut the potatoes into thick slices.
Step 2
Add the potatoes to a pot of salted boiling water. Cook for 7-10 min, or until fork-tender.
Step 3
Peel & mince the shallot.
Step 4
In a small bowl, mix together the sour cream, shallots, chopped chives, salt & pepper.
Step 5
Drain the potatoes. Plunge them into a bowl of icy cold water to stop the cooking.
Step 6
Arrange the salad greens, potatoes & smoked salmon in a serving bowl. Top with dollops of herbed sour cream. Season with salt & pepper. Add a drizzle of olive oil. Enjoy!
