Make sure you have...

Step 1
Drain & rinse the chickpeas, then add them to a bowl. Drizzle the pesto onto the chickpeas & mix well.
Step 2
Cut the cherry tomatoes in half.
Step 3
Place a flour tortilla on a clean work surface. Add the pesto chickpeas to the bottom third of the tortilla. Sprinkle with the mozzarella.
Step 4
Place the halved cherry tomatoes on top of the mozzarella. Season with salt & pepper. Arrange the spinach on top of the tomatoes.
Step 5
Wrap the tortilla tightly.
Step 6
This step is optional, but if you'd like a golden crust & melty cheese, you can quickly toast the wrap in a frying pan! Heat a drizzle of olive oil in a pan over medium heat. Place the wrap seam-side down & cook for 1-2 min per side, or until golden & crisp.
Step 7
Cut the wrap in half, serve & enjoy!
