Step 1
Preheat the oven to 425°F. Peel & cube the sweet potato.
Step 2
Wash & cut the broccoli into florets. Halve the florets to create a flat edge.
Step 3
Pat the chicken dry with a paper towel. Cover with a sheet of plastic wrap. Use a meat mallet, rolling pin or wooden spoon to pound & tenderize the chicken.
Step 4
Line a sheet tray with parchment paper. Add broccoli florets & cubed potatoes to one side. Arrange the chicken breast on the other side. Season all over with salt & pepper. Add a generous drizzle of olive oil & toss well to combine. Roast in the oven at 425°F for 18-20 min, or until the chicken is fully cooked (internal temp reaches 165°F).
Step 5
In a small bowl, combine a 1/2 tbsp olive oil, tahini paste, maple syrup, lemon juice, salt & 1 tbsp of ice water. Whisk well until the sauce is thick & creamy. Thin the sauce with ice water as needed.
Step 6
Remove the sheet tray from the oven. Transfer the cooked chicken to a cutting board. Cover with foil follow & rest. Toss the veggies & return to the oven until crisp, about 10 more min.
Step 7
Remove the foil. Slice the chicken.
Step 8
Remove the veggies from the oven. Serve in a bowl with sliced chicken & maple tahini sauce. Enjoy.
