Step 1
Rinse & drain the lentils. (If using dry lentils, follow the cooking instructions on the package.) Thinly slice the red onion.
Step 2
Mix the lentils, blue cheese (cubed or crumbled), chopped sun-dried tomatoes, a drizzle of olive oil, salt & pepper in a bowl. Top with slices of red onion. Salad is served!
