White rice (long grain)

Step 1

Cook the rice according to package directions.

Flour (all-purpose)
Chicken breast

Step 2

Meanwhile, season the chicken with salt & pepper on both sides. Add the flour to a dish & coat the chicken on both sides.

Step 3

Heat a drizzle of oil in a pan over medium-high heat. Add the chicken & cook for 5-6 min on each side until golden brown. Remove the chicken from the pan & set aside.

Lemon
Broth (chicken)
Butter (unsalted)

Step 4

In the same pan, add the chicken broth, lemon zest, lemon juice & cubed butter. Season with salt & pepper. Cook on low heat while scraping the browned bits from the bottom of the pan for about 2-3 min.

Step 5

Add the chicken back in the pan. Cover & cook for about 5 min or until the chicken is fully cooked. Halfway through cooking, baste the chicken with the sauce.

Green beans (frozen)

Step 6

In a pot of salted, boiling water, add the green beans & cook for about 3 min. Drain the green beans.

Step 7

Serve the chicken on a bed of rice & green beans. Top with the lemon-butter sauce & enjoy!
