Cook the pasta according to package instructions.
Meanwhile, cut the chicken into thin strips. In a pan over medium heat, melt a pat of butter or drizzle of olive oil. Add the chicken. Add the lemon zest & juice. Cook, stirring frequently, until lightly browned & cooked through, about 5 minutes.
Add the cream to the chicken & simmer until the pasta is done cooking, or 3 more minutes. Fold in the fresh spinach leaves. Season with salt & pepper. Remove from heat.
Add the drained pasta to the pan. Top with grated parmesan. Serve & enjoy!
