Step 1
In a bowl, toss the coleslaw mix with sesame oil, rice vinegar & salt. Let it sit while you prepare the grilled cheese.
Step 2
On one slice of bread, layer one slice of provolone, then the kimchi, then the other slice of provolone. Close with the other slice of bread. Continue with remaining sandwiches.
Step 3
Heat a skillet over medium-low heat & melt the butter directly in the pan. Once melted, place the sandwiches in the pan & cook for 3-4 min per side, pressing gently with a spatula, until golden brown & crispy.
Step 4
Slice the sandwiches in half & serve immediately with the cabbage slaw on the side. Enjoy!
