Oven, Baking Dish
Preheat the oven to 400°F. Peel & cut the carrots in half lengthwise. Then cut into slices.
In a small bowl, mix the honey with the mustard.
Add minced or crushed garlic & a drizzle of oil. Season with salt & pepper. Whisk to combine.
Grease an oven-proof baking dish. Then add the chicken thighs.
Brush the chicken thighs with the honey-mustard mixture.
Arrange the carrot slices around the chicken, drizzling them with oil. Sprinkle thyme over all.
Season with salt & pepper. Pour the water around the perimeter of the dish. Bake for 20 min.
When the chicken is cooked through & the carrots caramelized, remove from the oven. Serve & enjoy!
