Who can resist homemade gnocchi? Or brown butter sauce!
Peeler, Stovetop, Pot (small), Colander, Frying pan
Step 1
Peel the potatoes. Then cut them into cubes.
Step 2
Cook the potatoes in a pot of salted boiling water for 20 min, or until fork-tender.
Step 3
Drain the potatoes. Transfer them to a large bowl. Mash them until puréed.
Step 4
Separate the egg white from the yolk, reserving only the yolk. Make a well in the center of the potatoes. Add the egg yolk, a pinch of salt & the flour to the well. Mix with a wooden spoon, then with your hands. The dough should come together into a ball.
Step 5
Flour your work surface. Cut the ball of dough in half. Using the palms of your hands, roll each half into a log.
Step 6
Cut each log in half lengthwise. Then roll each one into a longer, thinner log. Cut these logs into 1-inch pieces. Using a gnocchi board or the tines of a fork, form gnocchi marks into each piece.
Step 7
Bring a pot of water to a boil. Add a pinch of salt. Gently add the gnocchi. Cook for 2 min, or until they float to the surface.
Step 8
Remove the gnocchi from the pot & drain well.
Step 9
Melt the butter in a pan over medium-high heat. Swirl the butter in the pan as it bubbles & browns into a sauce.
Step 10
Gently crush the whole, unpeeled garlic cloves with the side of a chef's knife. Add them to the pan. Then add the gnocchi. Cook, stirring for 4 min.
Step 11
When the gnocchi are golden brown, remove them from the heat. Season with salt & pepper. Serve with the brown butter sauce & garlic. Enjoy!
