Step 1
Preheat the oven to 275°F. Place the ham on a baking dish or sheet tray, add enough water to cover 1/2 inch of the surface of the dish. Cover tightly with foil. Bake according to package instructions, about 15 minutes per pound.
Step 2
Peel carrots and set aside.
Step 3
In a small saucepan on medium heat, add butter, brown sugar & a splash of water. Bring to a boil, then lower to a simmer until slightly thickened, about 5 minutes. Remove from heat.
Step 4
Add apple cider vinegar & a pinch of salt to the sauce. Mix to combine & set aside. The sauce will thicken more as it sits!
Step 5
When the ham has about 30 minutes left to cook, remove it from the oven. Add the carrots, place the foil back on & finish cooking.
Step 6
Remove ham & carrots from the oven. Let the ham rest. Meanwhile, add the carrots to a skillet on medium heat. Add 3/4 of the sauce & cook for about 10 minutes.
Step 7
Slice the ham into 1/4 inch thick slices. Serve the ham with the glazed carrots. Garnish with fresh parsley if you have. Top the ham with the additional sauce & enjoy!
