Ham & Mushroom Frittata

Ingredients

Oven, Stovetop and Frying pan.
Recipe

Step 1
Preheat the oven to 350°F. Peel & slice the onions into thin strips.

Step 2
Wash & slice the mushrooms.

Step 3
Heat a drizzle of olive oil in a pan, over high heat. Add the onions, frozen diced potatoes & mushrooms. Season to taste & sauté for 8-10 min, stirring occasionally.

Step 4
Meanwhile, crack the eggs into a mixing bowl. Season with salt & pepper, then beat them with a fork or whisk.

Step 5
Add the milk & whisk again.
Step 6
Line the bottom of an oven-proof dish with a sheet of parchment paper, then spray it with baking spray.

Step 7
Add the potato veggie mix & cubed pancetta to the dish. Mix then pour the egg mixture on top. Bake for 20-25 min at 350°F.
Step 8
Remove the frittata from the oven & unmold it.* Serve the ham & mushroom frittata with a side of lettuce dressed to your liking. Re-season to taste & enjoy! * Check out our tips for this step

You can prep this frittata ahead of time. Simply slice it up & store in an air-tight container in the fridge to enjoy cold or re-heated later!
