Make sure you have...

Step 1
Wash & halve the bell pepper. Remove the seeds & slice lengthwise, into strips.
Step 2
Heat a drizzle of oil in a pan over medium heat. Add the peppers, stir & cook for 2-3 min, until slightly softened.
Step 3
Add in the green curry sauce & shrimp. Toss everything with the sauce. Simmer all together for 3-5 min until the shrimp are fully cooked.
Step 4
As the shrimp simmer, wash & thinly slice the Fresno chili pepper for some spice. Wash cilantro for garnish, if using!
Step 5
As the shrimp finish cooking, heat the rice according to package instructions.
Step 6
Serve the curry shrimp & peppers over a fluffy bed of rice. Garnish with sliced chili pepper & cilantro (optional). Squeeze with lime (optional), serve & enjoy!
