Ingredients

Utensils

Stovetop and Frying pan.

Recipe

Smoked paprika

Step 1

Prepare the marinade. In a bowl, add : the olive oil (1 tbsp per serving), paprika, salt & pepper. Mix to combine.

Salmon (fresh)

Step 2

Add the salmon. Set aside in the fridge to marinate for 10-15 min.

Cucumber

Step 3

Meanwhile, prepare the Greek salad. Wash & dice the cucumber.

Tomato

Step 4

Wash & dice the tomatoes.

Red onion

Step 5

Peel & thinly slice the red onions.

Step 6

In a bowl, add : the cucumber, tomatoes & red onions. Season with salt, pepper & a drizzle of olive oil. Mix to combine.

Step 7

Heat a drizzle of olive oil in a pan, over medium heat. Add the salmon skin-side down. Season with salt & pepper & cook for 3-4 min on each side, until golden brown.

Mixed grain blend (cooked)

Step 8

Meanwhile, reheat the mixed grain blend according to package instructions.

Greek Yogurt (plain)

Step 9

Prepare the yogurt sauce. In a bowl, mix: the Greek yogurt & a drizzle of olive oil. Season with salt & pepper.

Step 10

Serve the mixed grain blend with the Greek salad, grilled salmon & yogurt sauce. Re-season to taste & enjoy!
