Step 1

In a large bowl, mix the chicken with a drizzle of olive oil, salt, pepper & paprika. Place in the refrigerator to marinate while you make the salad.

Cucumber
Red onion

Step 2

Cut the cucumber in large chunks. Thinly slice the red onion or scallions.

Chicken breast

Step 3

In a frying pan over high heat, cook the chicken for 4 minutes on each side, or until cooked through.

Step 4

Spread the Greek yogurt over the bottom of plate. Place the cucumber & red onion on one half & the chicken on the other. Season with a drizzle of olive oil, salt & pepper. Enjoy!
